The Best Vegetarian Mozzarella Stuffed Meatballs

These meat free meatballs are some of the most incredible I have ever had. These are definitely the best vegetarian mozzarella stuffed meatballs of all time. They are super simple, juicy and delicious, and use very few ingredients. I like to use Beyond Beef for these meatballs, but Impossible Beef works well too! Serve these cheesy, yummy meatless balls with any type of pasta and maybe a side of veggies. I like to serve mine with a creamy tomato pasta, but just tradition marinara pasta with these mozzarella meatballs is excellent too.

What You Need For These Veggie Meatballs:

  • Beyond Beef or Impossible Beef: A package of the ground vegan beef.
  • Bread Crumbs: Panko bread crumbs preferably.
  • Parmesan, Garlic, Onion, Salt, Pepper, Basil, and Oregano: To create the perfect flavor for these meatballs.
  • Fresh Mozzarella: Store bought, or HOMEMADE.

Not only are these best vegetarian mozzarella stuffed meatballs meat free, they are egg free! Making these meatballs super affordable in these high egg-priced times. My husband and I love them, but my kid also loved them. Making this the perfect easy weeknight protein for dinner. It only takes about 30 minutes to throw this meal together and man, will you be pleased with yourself. The Best Vegetarian Mozzarella Stuffed Meatballs

Fresh mozzarella stuffed into super simple baked vegetarian "meatballs."

Ingredients
  

  • 1 Pkg(16oz) Vegan beef, I used Beyond Beef
  • 1/3 Cup Panko bread crumbs
  • 1/4 Cup Parmesan cheese
  • 6 Cloves Garlic, finely minced
  • 1/4 Cup Sweet onion, grated
  • 1/2 teaspoon Basil, dried
  • 1/2 teaspoon Oregano, dried
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 6 Ounces Fresh Mozzarella, cut into small cubes*

Instructions
 

  • Preheat the oven to 400 degrees(F).
  • In a large mixing bowl, combine the vegan beef, bread crumbs, Parmesan, garlic, onion, basil, oregano, salt and pepper. Mix together as best you can with a spoon.
  • Then I like to fold the mixture with my hands until fully combined.
  • Take about 1 1/2 Tablespoons of the meatball mixture, roll into a ball in your hands, then flatten it out in your palm.
  • Put a small cube of mozzarella into the center of the "meat", and then roll the "meat" around the mozzarella. Place in an 8×8 inch metal baking dish that has been sprayed with non-stick spray.
  • Repeat with all the meatball mixture and the cheese. Placing each of the "meatballs" next to each other in the baking dish.
  • Bake for 17-23 minutes or until the "meatballs" are golden brown.
  • Serve immediately with pasta and or veggies if desired.
